I totally understand the need and how a plan can make things easier for those of you willing to spend some time in the kitchen but feel overwhelmed when it comes to meal planning and weekly menus. Day 1 The POLENTA WITH FONTINA & ROASTED VEGETABLES quickly became a family favorite. It is hearty, cheesy, creamy, colorful and deliciously vegetarian. The presentation is gorgeous but the taste is even better!! You can serve it with a simple green salad.
Lemon Thyme Chicken
Day 2 This LEMON THYME CHICKEN recipe is a favorite in our home. It is sunny and lemony and goes well with pasta, rice, couscous, oven roasted potatoes or a dreamy potato purée,… There is just enough sauce to complement a side dish but it is light and there is no cream involved.
Tomato Salad with Blue Cheese Dressing
Day 3 Summer is coming to an end. If you can still find heirloom tomatoes do not hesitate to make this: TOMATO SALAD WITH BLUE CHEESE DRESSING. Add toasted nuts and a big slice of rustic bread and call it a meal! The surprising flavor combination between ripe heirloom tomatoes in season and blue cheese make this salad an unexpected quick favorite.
Lemony Artichoke Stew
Day 4 This LEMONY ARTICHOKE STEW is a traditional Lebanese comfort food preparation. The kids love it and ask for it very often. We just adore the hearty texture and flavors of this dish. The artichoke bottoms are cooked in a rich and silky lamb broth to which we add lemon and potatoes then elevate its savor with cilantro.
Fig Raspberry Cake
Dessert of the Week Figs are everywhere! This FIG RASPBERRY CAKE is an easy dessert to prepare and looks pretty too! The soft cooked fruits contrast with the cake texture and give it a very attractive feature: a “built-in” filling! The raspberry and orange flavors balance the sweetness of the figs.
Mahi Mahi en Papillote
Day 5 MAHI MAHI EN PAPILLOTE is healthy and incredibly easy to assemble. The few simple ingredients like olive oil, lemon juice, thyme and olives give this dish beautiful Mediterranean flavors.
Mango Shrimp Spoons
Appetizer of the Week These MANGO SHRIMP SPOONS are deliciously sunny. The curried apple sauce is a hearty and flavorful vehicle that contrats beautifully with the sweetness of the mango and the shrimp. It does not require a lot of cooking, can easily be made a few hours in advance and will surely wow your guests.
