Day 1 MAHI MAHI EN PAPILLOTE is healthy and incredibly easy to assemble. The few simple ingredients like olive oil, lemon juice, thyme and olives give this dish beautiful Mediterranean flavors. You can use a different type of fish, I chose the Mahi Mahi because it was from a local source here in South Florida.
Day 2 FATTOUSH is bursting with flavor and textures: it’s a Party! Crispy romaine lettuce and cucumbers with juicy tomatoes, delicate mache, peppery oregano and mint, thinly sliced scallions and radishes for an extra spicy bite and crunchy bread! Serve it next to fried eggs or a simple omelette.
