Day 1 Take advantage of the watermelon season and make this WATERMELON FETA SALAD before summer is over. The Feta cheese is perfect with the juicy watermelon, the tomatoes and cucumbers give interesting textures to the salad and the fresh mint links all the aromas together and brightens up this meal.
Day 2 SALMON CRUDO is always a crowd pleaser. It is very easy to make; dress the thinly sliced sushi grade salmon with different options: scallions or chives, a few sprinkles of sesame seeds for a nutty crunch (crispy bread crumbs work perfectly well too!), capers, dill or any type of herb you like,… the possibilities are endless. Don’t forget the extra virgin olive oil, nice flaky sea salt and a crack of black pepper.... You can also serve a bowl of white rice on the side to make a more filling dinner. Have fun!
Day 3 Don’t let the tomato season end before you make this super easy GAZPACHO. It can be a great appetizer of a full meal if you add grilled shrimps and plantain chips to this cold summer soup. Just writing about it made me crave it… Olé!
Day 4 I call this CHICKEN CURRY mediterranean, because it is my mom’s recipe and it has nothing to do with coconut milk, nor cream of any kind, and the spices are widely available. No secret difficult to find ingredient. Simple and straight forward! This is a recipe we all enjoy very much. Dessert of the Week The FIG AND RASPBERRY CAKE is easy to prepare and looks pretty too! The soft cooked fruits contrast with the cake texture and give it a very attractive feature: a “built-in” filling! The raspberry and orange flavors balance the sweetness of the figs. The cake is great with your morning coffee, or for dessert, afternoon snack… Who needs excuses?
