Day 1 Lebanese TABBOULEH is a parsley based salad with few ingredients: tomatoes, scallions, mint and bulgur. There is no lettuce in this salad, but it is usually offered with crispy romaine or cabbage leaves to scoop the tabbouleh and enjoy it as green as it can be. It is also a healthy alternative to pita bread. We don’t judge! Just enjoy it the way you like it… A lemony green vitamin packed meal!
Day 2 The CHICKEN CACCIATORE is cooked in white wine and tomato sauce, with hearty mushroom and pancetta notes and fresh herbs of course! It is rich and flavorful. On the first day I serve it with potato purée. After dinner, I debone the chicken, leaving the meat pieces and the sauce in a smaller pot. A couple of days later, the leftovers make great pasta sauce! You can quickly reheat the chicken cacciatore while the pasta is cooking. Dinner will be served in under 15 minutes. We can all use some delicious shortcuts from time to time :)
Naked Potatoes with Aioli
Day 3 The NAKED POTATO seduction ;) Those are the simplest potato wedges “ever”! They are roasted, golden and without any type of oil. Best part? They are marvelously easy to make. Don’t forget the aioli to go with it… You can have a potato only dinner or next to a grilled meat or fish.
Day 4 This LENTIL SALAD is cute and easy to put together. Nothing complicated here; mainly earthy lentils and fresh spinach leaves highlighted by scallions, parsley and dill. There is a lot more to salads than raw vegetables and romaine lettuce. This is a vegan and healthy dish that can make a meal with a nice piece of crusty bread, and hard boiled eggs. Options... always work around options ;)
Dessert of the Week Peach, Raspberry and Vanilla: Trio of love. PECHE MELBA is a classical French dessert that I simplified because we all need shortcuts!! The peaches are poached in a simple syrup, then served with vanilla ice cream and raspberry sorbet. The simple syrup has some peach liqueur to give extra love to the peaches. The toasted almond flakes add texture and crunch to the soft delicate peaches and creamy cold ice cream.
