Day 1 The MUJADDARA is a staple in the vegan Lebanese cuisine. We used to eat it on a regular basis before vegan was even a thing! Prepare this lentil based dish with CABBAGE SALAD. If you have time, prepare a good amount of PICKLED ONIONS and enjoy them with this meal and throughout the week… they are delicious as a topping on almost anything. Oh! And don’t forget the pita chips… ;)
One Pan Chicken & Potatoes
Day 2 ONE PAN CHICKEN & POTATOES is as easy as can be. This meal does not require constant attention. The oven is in charge of the work; roasted golden chicken pieces with potatoes, coriander and sea salt. Finish it with some fresh cilantro and lemon juice. It’s magic!
Day 3 The RATATOUILLE is hearty and comforting; a vegetable party! Serve it as a side to an Omelette or next to simple White Rice.

Day 5 PESTO! PESTO!! PESTO!!! I can never have enough pesto in the house. Make some delicious pesto and have fun: serve it over any shape or form of Pasta, Orzo, on Minestrone Soup, on a Caprese Salad etc... Yum!!!
