This week I finally did the Facebook page for Rafaella, food from the heart. So let me start by welcoming the new fans, followers and subscribers,... :))
These past few days were very busy, but not in the kitchen... I didn't have time to try anything new,... So it was comfort food all the way... :) I did some Oven Baked Kafta and Potatoes in Tomato Sauce. We love that dish, it takes us back to our delicious childhood memories... My two little princes love it too, but they are becoming very demanding, they won't eat leftovers... And looking at the huge amount of Kafta I did, I was not very pleased by their reaction: “mami! Kafta again? we had that yesterday…” Next time,… I’ll divide the recipe in two, one to eat right away, and the other half will spend some time in the freezer.
The Kafta I prepare is a mixture of two kinds of ground meat: beef and lamb, to which I add onions, parsley, soft white bread, allspice and salt. The Kafta has multiple applications and ways to be enjoyed: grilled, baked, fried, toasted between two layers of pita bread etc…
The kids, who sometimes consider the kitchen as their private restaurant (and it makes me smile!), asked me to cook some Orzo with Pesto. Judging by the recurrence of this specific request, Pasta with homemade Pesto must be their definition of comfort food...
I also made a delicious Leek and Potato Soup.
On tuesday, I did my mom’s recipe of Beef Stroganoff. I consider this recipe one of the easiest to prepare,… it is very hearty and comforting… this dish and the memories it brings are simply divine.
On the weekend, we took the kids to a strawberry and tomato farm in homestead. We picked a lot (lot!!) of tomatoes… They tasted like real tomatoes (sadly, it is not so common anymore!). I decided to make a huge stock of tomato sauce, that I could freeze for future use and some Berghol bi Banadoura (Bulgur cooked in tomato broth). I discovered this dish a few years ago. My mother in law gave me her recipe, so her son, mon mari d’amour, can have one of his childhood dishes, in miami…! It’s one of the healthiest dishes EVER! It’s very simple to make. I’m going to share the recipe in the next newsletter, so stay tuned!
