Easy Quick Pickled Onions

This is one of the recipes you didn’t know you needed!
You will always find several pickle options in my fridge like Lebanese cucumber pickles, Kimchi, French cornichons, whole pepperoncini… and recently you can add homemade Pickled Onions to that list. I just love a small bite of tangy pickles to balance the richness of a dish, to brighten my pita pocket creations (think about the falafel!!), as part of the Tuna and White Bean Salad or to complement a potato salad.


This is a recipe for “refrigerator pickles”; it does not involve canning methods and long conservation techniques. It is easy to prepare so I make one batch at a time. I like to use a red onion for the color. It’s pink. Count me in!! I love the flavors of the apple cider vinegar in this kind of “everyday pickles”. It goes well with the mediterranean flavors of my daily cuisine.

Easy Quick Pickled Onions

Ingredients
1 cup thinly sliced red onions (half moons)
1/4 teaspoon sugar
1/2 teaspoon of salt
1/4 cup hot (boiling) water
1/3 cup apple cider vinegar
Fresh Thyme leaves

Directions
Prep all the ingredients.
You will need one medium bowl and a small glass jar with a lid.

Place the sliced onions in a medium bowl, sprinkle the sugar and salt then pour the boiling water and let it sit for a few minutes. Add the vinegar. Mix and give the onions some time to soften and be pretty!! (approx. 30 minutes)
Transfer to a jar. Add fresh thyme leaves.
Close with a lid and keep in the fridge.
