The naked potato seduction ;)
Simple potato wedges, roasted, golden and without any type of oil. Best part? They are marvelously easy to make.

This is a non-recipe type of food preparation. Zouk and I have been making those for over 20 years; after many experiments we discovered that slicing the potatoes in wedges, sprinkling them with salt and roasting them in a hot oven (425F / 220C) for approximately 30 minutes will make them golden and ready for dipping in Aioli. That’s it! Just salt. No fat, no oil, no pre-boiling... no drama batata!!
Tip: Play with the dipping sauce; you can keep the aioli as a base and add to it old fashioned mustard, regular Dijon mustard, a drizzle of honey, ketchup, sriracha sauce,... have fun!
