Zouk's Herb Condiment

This is how my husband cooks for us on the weekend; it usually involves BBQ, bold colors and a magical condiment. Zouk will create a sort of herb based topping to complement the grilled items of the day with any type of fresh herbs available in the fridge or in the garden… This Herb Condiment is a happy party of parsley, tarragon and basil, lemony, sunny and bright like the Mediterranean flavors we enjoy the most.

This herb mixture recipe is very easy to put together and goes perfectly well with grilled fish, meats, vegetables or simple bread slices according to the kids!

For the Octopus: We find good quality boiled octopus at the grocery store,… We put them on the bbq for a few minutes, turning them occasionally, on each side, looking for some little charred notes. Slice them in half and combine them with large white beans or roasted potatoes, and finish the dish with the herb condiment drizzles on top. Keep some on the side for extra herb love.

Zouk’s Herb Condiment

Ingredients
3 Tablespoons fresh tarragon leaves, chopped
3 Tablespoons fresh Italian parsley leaves, chopped
3 Tablespoons fresh basil leaves, chopped
2 Tablespoons black olives, pitted and chopped
1 scallion, finely chopped
2 Tablespoons capers
2 Tabelspoons lemon juice
3 Tablespoons extra virgin olive oil
Sea salt
Black pepper

Directions
You will need on medium bowl for mixing.

Straight forward… mix all the herbs with the chopped olives and capers. Drizzle with lemon juice and extra virgin olive oil. Taste! Add salt after tasting; the olives and capers can be really salty depending on the brand you are using… Add the sea salt amount to your taste and some fresh cracks of black pepper.

Set aside until ready to use.
