Citronette. Basic Salad Dressing
Nothing complicated here, just a few good ingredients you’d find in any Mediterranean kitchen for a Basic Salad Dressing.
Citron is for Lemon. Think of this as a Citronette, the sunnier cousin of a Vinaigrette. Same idea, but with lemon juice instead of vinegar, which makes it brighter and softer. This citronette is my forever go-to; simple, bright, and foolproof. This is the one dressing recipe I keep going back to; it never disappoints. The magic ratio? Three parts olive oil to one part lemon juice. t works beautifully with most of my leafy green creations. Go ahead, double or triple it if you need to; respect the ratio and you’ll shine… or at least look like a total salad wizard. Play around with the dried herb (or skip it altogether) depending on your mood, or whatever’s happening in your salad bowl du jour.
Don’t drown your greens: you’re going for a dressing kiss, not a swimming pool. ;) Keep the rest in the same jar and pop it in the fridge for a few days. You’ll be very happy it’s waiting for you.

Citronette. Basic Salad Dressing

Makes: 1/2 cup salad dressing
Ingredients
6 Tablespoons Extra Virgin Olive Oil
2 Tablespoons lemon juice
1/2 teaspoon Dijon mustard
1/2 teaspoon dried oregano (or herb of your choice)
1/4 teaspoon fleur de sel (or flaky sea salt)
4 to 5 good twists of the black pepper mill
Directions
You will need a jar with a tight lid and a pinch of enthusiasm (trust me, you’ll use both!)
Put all the ingredients in a jar and close it tightly. Hold the jar with both hands, your thumbs on the lid (believe me, my advice is based on open-lid-splashing-cieling-experiences) and shake it like you mean it! You can also dance, which is always a good idea. ;)
The dressing is ready.
Label and date your new creation, then store it in the refrigerator for up to 4 days.
