easy dinner

​spinach stew

the kids have been on vacation for the whole week... and cooking every day, new things, is really challenging when they're around. I needed something easy for tonight...

I had some cooked meat sitting in the fridge. it's a typical Lebanese stuffing, made of ground meat, caramelized onions and pine nuts. I heated it up in a large pot, added some garlic, homemade chicken stock and water. Brought it to a boil, covered it and let it simmer for 30 minutes. Then I aded baby spinach, fresh cilantro and lemon juice; and seasoned it with ground coriander and salt. I let it simmer a little longer so the flavors can do their magic.

I will serve this with white rice.
