1 cup granulated sugar
1 cup water
1 tablespoon lavender flowers
1teaspoon lemon zest
1 ½ cup lemon juice
6 cups cold sparkling water
1 cup ice cubes
Lemon, thinly sliced (optional)
You will need a small pot, a strainer-sifter and a large pitcher.
In a small pot, over medium heat, combine the sugar and the water. When it reaches a boiling point and the sugar is completely dissolved, remove the pot from the stove. Add the lavender flowers and the lemon zest to the sirup and let it infuse for 10 minutes. Strain the sirup using a sifter. Discard the lavender and zest and reserve the clear sirup until completely cool.
In a large pitcher, pour the lemon juice and the sirup and mix well. Add the cold sparkling water and ice cubes and mix again.
For additional sunny notes, you can compliment the pitcher or the serving glasses with thin slices of lemon.
